Does anyone know what glycogen actually tastes like, and can you buy it in dried/powdered form for cooking, etc. with, the same way you can with starch?
How would you purify it? Butit might make up part of the taste of met, as it is stored in muscl, and especially liver. I don't see how you could get it outin any sensible amount otherwise
I suspect it would taste faintly sweet but not to a great degree as we don't have the relevant enzymes in saliva. Probably fairly bland like cellulose tastes to use. It can be purchased from Sigma Aldrich from cows, oysters or rabbits Oyster Glycogen.
